We’ve paired up with our pals at LowLow to bring you a series of recipes that are high on taste, but low on calories. The perfect excuse to get the girls over for a bite to eat and a catch up! Here's a simple recipe for some delicious muffins!

- 200g LowLow Original Spread
- 300g Plain Flour
- Pinch Salt
- 200g Sugar
- 10g Baking Powder (2tsp)
- 50ml Milk
- 4 Medium Eggs
- 1 tsp Lemon Juice
What you’ll make:
These ingredients will make you 18-24 muffins (cup cake size)
What to do:
- In a bowl blend together the LowLow Original Spreads, flour, salt, sugar and baking powder by hand, or by using a mixer on a slow speed for 3 minutes.
- In a jug whisk together the milk, 4 eggs and lemon juice by hand
- Then pour the liquid mixture into the above bowl blending for 2 minutes, again whether by hand or with a mixer on a slow speed. Then scrape down the bowl.
- Mix again for 3 minutes with more vigor or on a medium speed with mixer.
- If you want to give your muffins some extra flavour and fun, you can add the fruit of your choice at this stage and mix at a slow speed. (We like blueberries!)
- Now spoon the muffin mixture into a muffin tray and pop the tray into a preheated oven at the temperature below for 21-25 minutes: Fan Oven: 190°C/Standard Oven: 200°C
- When the muffins look deliciously golden and ready to eat carefully remove them from the oven and place on a wire cooling rack.
- To give your muffins an extra sparkle you could sprinkle with icing sugar or decorate with chunks of fruit.
