4 brilliant Father’s Day treats to bake for your old man this Sunday

There’s no one in the world like your dad.

While he’s the first person to absolutely mortify you with a cringey dad joke in public, he’s also the first person to volunteer when you need some help or even a shoulder to cry on.

If you’re stuck for cash this Father’s Day (it’s on the 18th June BTW) then why not bake your dad something special to show him how much you really care?

Here are some quick and easy recipes that you can whip up using ingredients from your local Lidl. Try not to eat them all yourself.

Chocolate avocado truffles from Eating Bird Food.

Ingredients:

  • 1/3 cup mashed avocado (about 1/2 an avocado)
  • 1/2 cup dark chocolate chips
  • Cocoa powder
  • Sea salt

Method:

  1. Add avocado and a sprinkle of sea salt to a food processor and pulse a few times to combine.
  2. Melt chocolate chips by placing them in a small microwave-safe bowl and microwaving for 30 seconds. Stir and microwave for another 20 seconds or until all the chocolate chips have melted. (You can also do this with a double boiler). Pour melted chocolate into a food processor with the avocado and pulse until mixture is completely combined and avocado is no longer visible. If you don’t have a food processor you can mash the avocado with a fork and combine with the chocolate until smooth and lump-free.
  3. Place truffle mixture in the fridge to set for 30 minutes. Once the mixture has firmed up a bit, remove from fridge and make the truffles by rolling a tablespoon at a time into a 1-inch ball. You should get about 10 truffles. Fill a shallow bowl with cocoa powder and roll each truffle until coated. Place on parchment paper. If you’re going the sea salt route, skip the cocoa powder and simply sprinkle a few sea salt flakes on each truffle. Store in the fridge until ready to serve.

Peanut butter cookies from I am baker.

Ingredients:

  • 1 cup peanut butter 
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 1 teaspoon baking soda
  • 1 pinch salt
  • 1 teaspoon vanilla extract

Method:

  1. Preheat oven to 350 degrees F (175 degrees C). Prepare cookie sheets.
  2. In a medium bowl, add all ingredients and stir together until smooth.
  3. Roll into 1 inch balls and place 2 inches apart onto the prepared cookie sheets. Flatten each ball with a fork, making a criss-cross pattern.
  4. Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

Super simple banana bread from eazy peazy mealz.

Ingredients:

  • 3 bananas (brown, mashed)
  • 1/3 cup melted butter
  • 1/2- 1 cup sugar (depends on how sweet you want it)
  • 1 egg, whisked with a fork
  • 1 tsp vanilla
  • 1 tsp baking soda
  • Pinch of salt
  • 1 1/2 cups flour

Method:

  1. Preheat oven to 350 degrees.
  2. In a bowl, mix all ingredients by hand until well incorporated.
  3. Pour into a greased bread pan (approx 9x4x4).
  4. Bake 50 minutes to 1 hour or until browned.
  5. Cool on a cooling rack.

Ingredients:

  • 1 cup biscuit crumbs
  • 4 tablespoons unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 16 ounces cream cheese, softened
  • ½ cup sour cream
  • ¼ cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla extract

Method:

  1. Preheat oven to 325 degrees.
  2. Line a muffin pan with paper liners.
  3. Combine crumbs, butter and sugar in a small bowl. Texture should be similar to wet sand. Divide crust evenly into the bottom of the lined muffin tin.
  4. Bake for 5-6 minutes or until golden brown.
  5. Take out of the oven and cool completely.
  6. Meanwhile assemble the cheesecake filling. Beat cream cheese in a stand mixer with the paddle attachment.
  7. Add in sour cream, sugar, eggs and vanilla. Mix until combined. Make sure to scrap the sides of the bowl.
  8. Pour cheesecake mixture into cooled muffin tin. It will be about 2 tablespoons of filling each. Fill almost all the way to the top.
  9. Place in the oven and bake for 20 minutes or until the cheesecakes are set. They will still jiggle a bit. Do not over cook them. If they start to crack they are getting over cooked.
  10. Allow them to cool in the muffin tin completely. Place in the refrigerator to chill and serve cold with your favourite toppings.
