Chef Anthony Bourdain has revealed his secret to PERFECT scrambled eggs

It’s the breakfast, brunch (and lunch and dinner) staple we all rely on as part of our repertoire, but a top chef maintains we’re all doing scrambled eggs all wrong.

New York chef Anthony Bourdain has revealed that the rest of us mere mortals are making a grave error when it comes to the fluffy, protein-packed dish.

Speaking to Tech Insider in a video, Bourdain said he doesn’t add any dairy or liquid whatsoever to his (very lightly) beaten eggs; just a shake of salt and pepper.

His advice is to begin with a hot pan, but make sure it’s not on the highest setting or it’ll be too hot.

The big secret? Bourdain advises melting a dollop of butter in the pan before adding your eggs and letting them sit for a few seconds to firm up before moving them gently in the figure of eight until they cook through.

His top tip is to begin with eggs as fresh as you can find. We’ll be trying this with whatever our local Centra can offer us on Sunday morning.
