These coconut almond granola bars are perfect for a healthy breakfast

A lot of us indulged over the summer.

We mean, summer was filled with nights out, dinners and eating ALL the food on holiday. So, right now we’re trying to get back on a little health kick – and these gluten-free, sugar -free coconut almond granola bars are currently top of our treat list.

Here is how you make them yourself:

Gluten free, sugar-free coconut almond granola bars

(Recipe yields 8-10 bars)

Ingredients

2 eggs

45 g sukrin gold (you’ll get it in a health food shop)

15 g sukrin icing (health food shop)

1 teaspoon vanilla extract

115 g gluten free oats

70 g flaked almonds

30 g desiccated coconut

35 g dried cranberries

1/2 teaspoon cinnamon

1/2 teaspoon salt

Method

Pre-heat oven to 180 degrees Celcius.

Whisk together eggs and sukrin. Add vanilla extract, salt and cinnamon.

Add in the rest of the ingredients and mix together using a spatula.

Cover an oven tray with parchment paper and pour the mixture onto the tray. Spread mixture out and flatten down until the whole tray is covered.

Bake for 20-25 minutes until golden on top.

Let completely cool before you cut into bars. Oh, and if you are feeling like you need a little extra decadence, why not drizzle over some melted dark chocolate, you know, for an extra antioxidant hit!
