To  bring your at-home chip creations to the next level, we're showing you how to make these incredible Mediterranean Loaded Chips. This light and tasty meal is the perfect treat during the summer months, and it's suitable for vegetarians too.

The recipe uses Strong Roots Proper Chips, and they're top class when it comes to frozen chips.

Consisting of just two ingredients, Strong Roots Proper Chips are as  real as homemade chips, except they're easier to cook and they taste better too!

But first, here are the ingredients you'll need:

For the loaded chips...

  • 1 bag of Strong Roots Proper Chips. You can find Strong Roots in Supervalu, Centra, Dunnes Stores or Tesco.
  • 1 can of chickpeas, drained and rinsed well
  • 1 tbsp of olive oil
  • A clove of garlic, minced
  • A large tomato, finely diced
  • Juice of half a lemin
  • One small head of romaine lettuce, finely shredded

For the Tzatziki dip...

  • 250 g of vegan unsweetened soy or almond yogurt
  • 2 large handfuls of fresh parsley, finely chopped
  • A glove of gardlic, minced
  • A quarter teaspoon of salt
  • Juice of half a lemon

Now that you've got your ingredients in order, you're only four simple steps away from enjoying this delicious dish...

Step 1

Preheat your oven to 200C (400F). Place your Strong Roots Proper Chips on a baking tray and cook in the oven for 20 - 25 minutes.

Step 2

Mix the tzatziki ingredients in a bowl and set to one side. This can be prepared in advance and stored in the fridge for a couple of days. 

Step 3

Mix chickpeas, olive oil, garlic, tomato, and lemon juice in a bowl. Season to your own taste with salt and pepper.

Step 4

Layer the chips up with romaine lettuce, chickpeas, and tzatziki. Garnish with some pickled onion and parsley if desired.

And voilà! Now all that's left is for you to do is sit back, relax and enjoy your delicious creation - you've earned it!
