This Dublin bar has created a new cocktail and you’ll never want to drink anything else again

Cocktails are the elixir of life.

Okay, so that may be a little OTT but they’re the next best thing. From Bloody Marys to Old Fashioneds, Espresso Martinis to a good ol’ Mojito, we’ve sampled them all.

Poitin, isn’t exactly something we’d associate with a fine Cocktail list but one Dublin bar is trying to change that.

Once illegal in Ireland, Poitin is now regarded as ‘a smooth delicate spirit’ that is rapidly growing in foreign and domestic markets. So, what I’m trying to say is, Poitin is no longer made in a bath by your auld neighbour down the road. It’s officially fancy.

Hangover in Irish is ‘póit’ – another contributing factor to the reason we’re hesitant poitin drinkers. Until now that is.

The Exchequer Bar in Dublin 2, which is one the of the capital’s most popular cocktail bars, deservingly winning the top accolade at the recent RAI Awards for the Best Cocktail Experience in Dublin, has a new addition to its menu.

Aptly titled ‘The Last Straw’, this is a cocktail made up Micil Poitin, antica formula, ruby port, blood orange syrup and angostura/orange bitters, and is an absolute game changer.

The Last Straw is equivalent to having a party in your mouth. STUNNING *insert senorita emoji here*.

Currently shortlisted for the world’s best bars – not too shabby – The Exchequer is entering this little creation into The Bartenders Project in a bid to see their Head Bartender Conor Myers win a trip to the Oscars of the cocktail world. (They sound much better than the actual Oscars). 

Each bartender has to create a signature cocktail and a simple serve that’s easy to recreate in bars… and at home.

Here’s the ‘simple serve option’ Dorcha Storm – Micil Poitin, fresh muddled lime, ginger beer and angostura. Best served in a coupe glass.

This isn’t the first time the guys and gals at The Exchequer impressed us.
