Feeling taco Thursday? Avoca has shared a chicken and avocado recipe that looks sooooo good

Pass the hot sauce…

Before all of the thing that we won’t mention started, one of our culinary highlights was going out for tacos. Quick to make, cheap to buy and easy to eat, those tasty little bundles were always an option when we weren’t looking for fine dining but didn’t want to cook for ourselves either.

Of course, tacos taste every bit as good when made at home, and they’re high value on the effort versus reward scale. You only need a few basic ingredients to whip up tacos that will pass muster, but if you want to create something that will give you the full ‘eating out’ feels then there are a few professional tweaks that you can add to up the flavour.

Below, foodie favourite Avoca has shared a recipe for barbecue chicken tacos with coleslaw, mango salsa and avocado. Save them up family style… or better still keep them all to yourself.

AVOCA’s Grilled BBQ Chicken & Avocado Tacos

Serves 4-6

Ingredients:

2 chicken breasts

100ml your favourite BBQ sauce

1 knob of ginger, minced

2 cloves garlic, minced

1 tsp ground cumin

For the coleslaw:

60g cabbage, shredded

1 lime, juiced

1 tsp olive oil

Small bunch of parsley, chopped

For the mango salsa:

1 mango, diced small

1 red chilli, chopped finely

½ red onion, chopped finely

Small bunch parsley chopped

For the guacamole:

2 avocadoes, crushed

1 lime, juiced

2 plum tomatoes, diced

1 tsp olive oil

To garnish:

Crème fraiche or sour cream

Hot sauce

Tortillas

Lime wedges

 

Method:
1. Marinate the chicken with the BBQ sauce, garlic, ginger, cumin, salt & pepper.

2. Grill over high heat until thoroughly cooked through. Shred with 2 forks into large pieces.

3. Mix all the ingredients for the slaw and set aside.

4. Mix all the ingredients for the mango salsa and set aside.

5. Mix all the ingredients for the guacamole, season with salt & pepper and set aside.

6. Warm the tortillas over the grill to slightly blacken, this gives a wonderfully smoky flavour.

7. Arrange everything in bowls & serve family style. Enjoy!
