Kitchen Crusade: Here’s how to make two-ingredient pancakes that are actually unreal

They’re healthy too… sort of.

Pancakes are universally tasty.

Fluffy, thick, and entirely versatile, pancakes are not just for Tuesday, they’re for life.

I, like most people, tend to restrict my pancake consumption to pre-Ash Wednesday, milling myself full of savoury crepes and sugar dusted pancakes for 24 hours.

But what about the rest of the year? What about all of the days that fly by without the prospect of a food that can be enjoyed for breakfast, lunch, and dinner?

Classic pancake batter is not all that difficult to make (or buy pre-made, whichever), but there is a recipe that’s so simple and so easy that you’d be low key judged if you weren’t whipping it out at every possible occasion.

All you need is two eggs and one banana to make yourself a little stack of pancakes that are super delicious and super healthy.

(Unless you decided to load them with sweets and chocolate afterwards, obviously. Live and let live, etc.)

Two ingredient pancakes

You’ll need:

  • 1 banana
  • 2 eggs
  • A sprinkle of cinnamon (if you want, it’ll make it three ingredients though, just FYI)

And here’s how to make it:

1. Whisk the eggs and mash the banana in a bowl. Combine and pour into a non-stick pan with a dash of oil over a high heat.

2. Fry for a couple of minutes and flip in between. Repeat three or four times, or for however much batter you’ve got.

3. Top with a load of nice things including maple syrup, strawberries, yogurt, and nuts.

Or top with nothing, whichever. Live your healthy life.
