These banana bread muffins will make your Sunday morning even better

There are few things that are better than pulling a tray of muffins out of the oven on a Sunday morning.

Especially if they’re super easy to make (and include heaps of chocolate.)

We recently stumbled across this recipe for banana bread muffins from Pinch of Yum and we just can’t get enough of the tasty treats.

They take just 30 minutes to prepare and bake – and make up to a dozen, so you’ll have plenty to store for the week ahead.

Here’s what you need…

  • 2 cups oats
  • 3 bananas
  • 2 eggs
  • 3/4 cup pitted whole dates
  • 1 teaspoon baking soda
  • Pinch of salt or cinnamon (optional)
  • Chocolate chips (optional – but it’s chocolate, and that makes everything so much better.)

The recipe takes 10 minutes to mix together if you’re using a blender – and just a tiny bit longer if you’re doing it by hand.

But either way, you won’t regret making these mouthwatering muffins.

Here’s what you need to do…

  1. Preheat oven to 350 degrees.
  2. Grease a muffin tin.
  3. Mix all ingredients in a blender or food processor until smooth (or mix by hand)
  4. Pour batter into muffin tin (you should have enough for 10-12 standard size muffins). Top with chocolate chips if you want.
  5. Bake for 15-20 minutes. Store in the fridge for up to 3 days.
