Recipe: This strawberry bread is just made for having with tea

There’s something about autumn that just makes us want to bake.

Longer, chillier evenings call for cups of tea with something sweet – like a divine strawberry bread.

Yes, we know that it’s been the year of banana bread but chalk it down, this treat is worth getting your loaf tin out again for.

It’s still strawberry season in Ireland so you should have no trouble getting your hands on some gorgeous ones, while the rest of the ingredients are all everyday pantry staples.

This recipe, adapted from AllRecipes, makes two loaves.

 

Ingredients

400g strawberries

400g plain flour

400g sugar, plus an extra tbsp to sprinkle on your strawberries

1 tsp cinnamon

1 tsp baking soda

1 tsp salt

300g butter, melted

4 eggs, beaten

 

Method

Preheat your oven to 180 degrees Celcius and grease two loaf tins.

Chop your strawberries into slices and place them in a bowl. Add the tablespoon of sugar, stir and then leave the bowl aside.

In a large bowl, mix your flour, sugar, cinnamon, baking soda and salt.

Add the melted butter and eggs to the bowl of strawberries and mix gently. Now add this mixture to the bowl of dry ingredients, combining them until the dry ingredients are just moistened.

Divide your mixture between the two loaf tins and bake for 45 to 50 minutes.

Cool on a wire rack and turn upside down to remove the strawberry bread from the loaf tins before slicing.
