These two ingredient pancakes are super quick to make and don’t require sugar

I love making crepes but I hate trying to get the ingredients right.

Year after year come pancake Tuesday I would head into the kitchen with the best of intentions to make amazing pancakes. First attempt, mix too runny. Second attempt, mix to thick. Third, fourth, fifth attempt…

I would end up with a mountain of useless pancakes and nothing to show for my hours of mixing and frying. That was until I discovered this recipe a couple of years ago.

All you need to make eight pancakes is one ripe banana and two large eggs, lightly beaten. That’s it.

Cut up your banana and mash it up a fork and then add your lightly beaten eggs. You can hand whisk but if you have an electric hand blender even better.

Once thoroughly mixed put a little oil in your frying pan and add two tablespoons of batter into the pan. Cook for one minute or until the sides are a nice golden brown.

Then serve up and enjoy with all of your favourite toppings. If you’re not a big fan of the taste of banana don’t worry as the flavour is not overwhelmingly banana.

And there you have it, so simple even the kids can make them.
