When you’re busy working, but want to keep yourself on the healthy straight and narrow, it can be hard coming up with simple swaps that can make a big difference.
Whether you’re trying to go gluten free, looking for a paleo alternative, or just want to go the extra mile with your fitness routine, we’ll be bringing you a simple snack swap each week.
This week… why not ditch rice for a veggie based alternative? Whether you want to cut down on your rice or grain intake, or need to up your five-a-day count, ‘caulirice’ or cauliflower rice is a great way to bulk up a meal without the added calories.
Make it in a batch for a family meal, or change things up with broccoli florets to use up the end of the vegetables in your fridge!
Ingredients:
- 1 medium head of cauliflower
Method:
- Add cauliflower florets to a food processor and pulse to create ‘caulirice’. The appearance should look fine like rice. Pulse on a slow speed to avoid cutting the vegetables down too fine.
- Blanch quickly in boiling water, or roast in the oven at 180C.
- Serve with a slow-cooked curry, or chilli con carne for a grain-free alternative to carbohydrates!
Tip!
Have a spare head of broccoli in the fridge? Break down into florets alongside the cauliflower florets to add a colourful, flavoursome treat to your plate!
