In the latest instalment of the National Dairy Council's Yogurt Tastemakers series, Erica Drum hit the road to West Cork to visit Glenilen Farm.
Whether we serve it up with fresh fruit and granola in the morning or as the ideal post-dinner snack, there's no denying our passion for yogurt. It's simple, it's natural and it's packed with calcium and protein - there's a lot to love about this dairy product!
However, have you ever wondered what goes on behind the scenes of Ireland's yogurt industry? Well, as part of their Yogurt Tastemakers campaign, the National Dairy Council sent chef Erica Drum to see how yogurt makes its way from farm to table in no time at all.
In the latest instalment of the National Dairy Council's Tastemakers, Erica visited Glenilen Farm in West Cork, where husband and wife Alan and Valerie Kingston produce yogurt, creme fraiche and butter. As yogurt accounts for 70% of the farm's output, Glenilen Farm was the ideal spot to delve into yogurt's natural, wholesome goodness.
The key ingredients in the Glenilen formula? Simplicity and naturalness. As Valerie explains, their natural yogurt is made from milk from the surrounding areas, bacteria, cultures to ferment the milk and dried milk powder to add thickness and texture.
"There's so much ultra-processed food out there and I'm passionate about wholesome food and yogurt just exudes that," Valerie says. "It's a healthy source of protein and calcium and the cultures and bacteria are so good for your tummy."
So, how do Alan and Valerie enjoy their yogurt? As they tell Erica, they love it on top of their porridge with fresh fruit in the morning, but they also appreciate its versatility. Valerie uses it to make tzatziki for savoury dishes, and she also uses it in her baking. Her yogurt lemon cake is a particular favourite.
Glenilen Farm also incorporates sustainable practices into their operations. They've installed PV panels on the roof, and last month 33% of the electricity used came from solar panel. Biodiversity is also important on Glenilen Farm, and to encourage bees and other pollinators, they have grown out a wildflower meadow.
