Northern Irish distillery creates cocktail inspired by Love Island’s Matthew

A distillery in Northern Ireland has created a cocktail inspired by Love Island’s Matthew MacNabb.

Co. Down’s Copeland Distillery invented the ‘Blindsided Bellini’ after last night’s fateful dumping in which Matthew failed to couple up and left the Love Island villa for good. 

Despite getting on really well with newcomer Priya, the medical student decided to pick new boy Brett over our very own Irish hunk. Why? you ask – no idea, really, but things aren’t all bad for poor Matt. At least he’s got his own cocktail named after him now.

To make the Blindsided Bellini, you’ll need: 

  • 50 ml Copeland Rhuberry Gin
  • 25 ml Fresh Lemon Juice
  • 10 ml Sugar Syrup
  • Topped off with Prosecco

Method: 

1. Make a simple sugar syrup by heating 100ml of water and 200g of caster sugar in a saucepan until the sugar dissolves. Top tip – you can make sugar syrup in advance to have on hand – store it in a jug in the fridge and it will keep for several weeks.

2. Squeeze 25ml of fresh lemon juice into a flute glass, together with 10ml of the sugar syrup.

3. Add 50ml of Copeland Distillery’s Rhuberry Gin and top up with your favourite prosecco and enjoy!

The Copeland Distillery founder Gareth Irvine says: “Our Rhuberry Gin is an infused gin distilled by hand. It features the most flavoursome rhubarb and blackberries which we source from our local farmers here in County Down.

“It’s an ideal summer staple as at 37.5% ABV it can be enjoyed simply with a mixer or used in cocktails like the Blindsided Bellini we created today to mark Matthew’s time in the villa. We wish Matthew, a fellow Co. Down man, all the best on his future outside the villa and hopefully back here on home soil.”
