Recipe

Her’s very own Cassie Stokes recently baked this delicious recipe for you to follow along with but first, here are the ingredients you’ll need…

Your ingredients…

  • 6 Chocolate Hot Cross Buns
  • 30g of Avonmore Butter, softened
  • 125g of dark chocolate, chopped
  • 1 tablespoon of vanilla extract
  • 600mls of Avonmore Double Cream
  • 600ml of Avonmore Fresh Cream, plus extra to serve
  • Zest of orange
  • 4 eggs
  • 170g Caster Sugar

Once you have your ingredients in order, you’re only three easy steps away from a mouth-watering Easter Sunday dessert that serves eight.

Step 1

Split the hot cross buns and lay the bases out on your baking dish. Butter each side, add your dark chocolate and then place the tops of the buns back on the bases.

Step 2

Heat the Avonmore Double Cream and Avonmore Fresh Cream, vanilla essence and orange zest in a saucepan at a low heat until simmering, before removing from the heat.

Beat the eggs and sugar until combined and pour them into the warmed cream, making sure to stir continuously. Strain the mixture evenly over the buns and let it sit for around 30 minutes.

Step 3

Pre-heat the oven to 170 degrees celsius. Place the pudding into a large roasting pan and pour enough boiling water into the roasting pan so that it comes to about halfway up the sides of the pudding dish. Cook for about 45 minutes, or until the mixture has set.

When it’s ready, dust with icing sugar, serve with Avonmore cream and enjoy!

Pretty straightforward, right? To see how they come out, take a look at Cassie’s delicious results below.
