Move aside sweet potato – courgette fries are taking over and they’re YUM

If you’re looking for another alternative to chips then we’ve another option that you’re going to love.

Courgette fries served with a garlic dip make for the perfect side dish to any meal plus, they’re 248 calories in a serving meaning you won’t feel too guilty either.

Ingredients

500g courgettes

1 teaspoon fine sea salt

1l vegetable oil

150g plain flour

1 teaspoon smoked paprika

1 teaspoon. dry mixed herbs

2 medium egg whites

And while we’re on it, another delish alternative to your standard chip is polenta fries. The last time I ate them I couldn’t get enough, here’s what you need.

Ingredients

nonstick cooking spray, for greasing

2 ½ cups milk, of choice(600 mL) 

2 ½ cups vegetable broth(600 mL)

2 cups polenta (320 g) 

2 tablespoons unsalted butter

1 teaspoon salt

½ teaspoon pepper

½ teaspoon dried oregano

½ teaspoon dried thyme

½ teaspoon dried rosemary

olive oil, for brushing (if baking)

4 cups canola oil, if frying (960 mL)

Lemon-herb aioli

½ cup mayonnaise (120 g)

1 clove garlic, minced

1 tablespoon fresh parsley, chopped

1 tablespoon lemon juice

salt, to taste

pepper, to taste
