‘Pancake sushi’ is our latest chocolate addiction and it’s SO easy to make

YUM!

Denise Curtin

Ever hear of pancake sushi?

Well, you are about to.

A fun, creative and delish way of mixing fruit, choccy and plenty of tasty pancake batter. Basically, pancake sushi is like your normal pancake covered in what ever spread you like and filled with whatever fillings you desire and then rolled and cut like sushi.

From blueberries and white chocolate sauce to strawberries, honey and crunchy digestives – pancake sushi both tastes nice and looks cute meaning points for both your tastebuds AND your Insta-feed. Win, win.

A simple concept, as it is basically a rolled pancake however, we only properly took notice of this idea last week when we saw a café in Budapest called Blue Bird dishing it out as one of their most sought-after desserts and boy, does it look good.

We need this in our lives…

So after seeing this serious #inspo, we thought to ourselves, this is something we need to all make.

From pomegranate seeds to raspberries, crunchy cashews to honeycomb chocolate and banana, the options for pancake sushi are endless and to get the ball rolling, here is a simple recipe for you to make your own.

You will need for crepes:

  • 1 cup white flour
  • 1 cup milk
  • 1 cup water
  • pinch of salt
  • pinch of sugar
  • 3 tbsp olive oil
  • 2 eggs

For serving:

  • Toppings of your choice – the more creative the better however we suggest bananas and Nutella for your first time,

Method

What you need to do is place all the ingredients for crepes in a bowl and mix them well. I always heat my pan well and spread half a soup spoon of the dough on a pan.

When cooked, place your crepe on a plate, place your filling evenly across the crepe, then roll your crepe tightly in one direction.

Slice your roll in 1-1,5 cm slices.

And ENJOY.
