5 utterly gorgeous Baileys infused desserts (and they’re simple!)

On the hunt for a Christmas dessert EVERYONE will adore?

Well we think we’ve found 5 truly indulgent, homey, Christmassy and utterly YUMMY options for you. If you’re looking for that something extra special, a little unexpected yet truly deserved — these might just knock your socks off.

1. Choc Chip Tiramisu

You’ll need:

  •  28 choc chip cookies
  • 200g mascarpone
  • 1 tbsp caster sugar
  • 1 tsp vanilla essence
  • 100ml Baileys Original
  • 500ml double cream
  • 200g cocoa
  • 1 tsp espresso powder
  • egg wash

Pop all ingredients in a bowl and mix well. Remove half of the mix to another bowl.

With the remaining half, add the cocoa, the espresso powder and mix together. Create a layer of cookies in your cake tray and cover them with this creamy chocolate mix.

Line with another layer of cookies, followed by the white mascarpone and cream mix you set aside. Continue this process, finishing with the plain white mix on the top. Garnish with flakes of chocolate and you’re all set. (NOM.)

2. Baileys Apple Pie

  • 2 sheets of pie dough
  • 30g melted butter
  • 4 tbsp cinnamon

For the apple sauce:

  • 55g butter
  • 1tsp cinnamon
  • 2tsp water
  • 150g brown sugar
  • 120ml Baileys Original
  • 25g plain flour

Roll out a sheet of pie dough on non-stick paper. Use a basting brush to coat it with the melted butter. Sprinkle the cinnamon on top and roll out the dough.

Chop the roll into around 24 pieces, placing them into the pie dish. Pop 55g of butter onto a warm pan adding the 150g brown sugar, the cinnamon and two tablespoons of water, mixing it all together on a low heat.

When it looks thicker and darker, add the 120ml of Baileys Original, mixing it altogether. Add eight thinly sliced apples, the 25g of plain flour and mix.

Going back to your pie dish, brush with egg wash again and fill with the apple mix from the saucepan. With the extra rolled dough pieces, place them in a circle on non-stick paper, covering them with another sheet of non-stick paper and roll it out flat with a rolling pin. Place it over the pie dish. Pack it in nice and cosy, trimming off the edges and brush on some more egg wash. Bake for 45 mins at 180°C/350°F.

3. Baileys S’morstini

You’ll need:

  • 125ml heavy cream
  • 125g milk chocolate
  • 125g crushed biscuits

For the cocktail contents:

  • 8 scoops choc ice cream
  • 1 tbsp vanilla essence
  • 150g Baileys Original

Pop the heavy cream into a Pyrex measuring jug, add the bits of chocolate and melt together. Pour the melted chocolate mix onto a medium size plate.

Grab a cocktail glass and dip the outside edge of the cocktail glass into it gently. Then do the same but using a plate of crushed biscuits, creating a tasty mix around the glass edge.

Pop the chocolate ice cream into a blender along with a tablespoon of vanilla essence and 6 shots (150g) Baileys Original. Pour the blended mixture into your four cocktail glasses and place four s’mores right on top. Serve and enjoy!

4. Baileys Christmas Tree

You’ll need:

  • 450g melted chocolate
  • 115g butter
  • 300g roasted hazelnuts
  • 30g sugar
  • 2g salt
  • 125ml Baileys Original
  • 30ml heavy cream
  • Puff pastry x2
  • Egg wash

For the chocolate dip:

  • 125ml Bailys Choc Luxe
  • 25ml cocoa powder
  • 25ml golden syrup
  • 50g milk chocolate

Melt that yummy chocolate, pop in the butter and stir until smooth. Put the hazelnuts, sugar and salt into a food processor and mix. Add in the melted chocolate and give it a blast. Add the Baileys and heavy cream and give it another little swirl in the food processor.

Roll out your puff pastry on non-stick paper and cover with the chocolate mix in the shape of a Christmas tree. Add a layer of puff pastry on top. Cut to the shape of a Christmas tree. Create branches along the size of your tree using a small knife (as seen) and give them a gentle twist.

Bake for 20 to 25 minutes at 190°C/380°F.

In a saucepan add Baileys Choc Lux, cocoa powder and golden syrup. Heat and add some extra milk chocolate. Then voilà! You have your chocolate dip.

5. Baileys French Toast

You’ll need:

  • 200ml Baileys Original
  • 3 eggs
  • 1 tbsp granulated sugar
  • 1 tsp vanilla essence
  • 1/2 tsp cinnamon
  • 1 tsp butter

For the cream:

  • 175ml whipping cream
  • 25ml Baileys Original
  • 2 tbsp caramel

Cut two extra large slices from a white loaf of bread. Make an incision on the side and pop in a large square or squares of chocolate.

Pour the Baileys into a Pyrex measuring jug, add the eggs, the granulated sugar, vanilla essence and cinnamon. Pour this mix over the bread and allow to soak.

Add the butter to a warm pan and allow to melt. Place one of the thick bread slices onto the pan fry, including the sides. Do the same on the other soaked piece of bread.

Add the whipping cream to a mixing bowl adding 25ml of Baileys, two tablespoons of caramel and whisk. Enjoy alongside your Baileys French Toast!
