3 kale recipes that are so delicious you’ll forget they’re healthy

There is no denying that when it comes to hipster food, kale has been doing the rounds (and then some) the last couple of years.

And while many of us have by now absolutely gathered that this leafy green veg is something we should be consuming more of, not all of us have quite embraced it. Yet.

Sure we know you can drink it in juice form, and some even turn it into healthy crisps, but were you aware there are so many more ways to enjoy this nutritional little powerhouse?

To convince you, we have rounded up three of our current favourite kale recipes, that are all so YUM, you totally forget they are in fact really good for you.

1. Linguine with Kale & Caramelized Onions

Give your Friday pasta a whole new spin with this tasty dish.

(Serves 4)

Ingredients

  • 2 tablespoons extra virgin olive oil, plus more for finishing
  • 2 red onions, thinly sliced
  • 2 cloves garlic, minced
  • 1 box whole wheat linguine
  • 1 bunch kale, tough rib removed and leaves thinly sliced (I used Tuscan kale here)
  • 8 ounces fresh mozzarella, torn into bite-size pieces
  • 1/4 cup chopped almonds or pine nuts
  • sea salt and freshly ground black pepper

2. Healthy fried rice with kale & spring onions

I love love love fried rice, but am also aware it is by far not the healthiest treat you can indulge in. Which is why I have taken to making this (delicious) substitute when the cravings get the better of me. Bonus? The kids love it too!

Ingredients

    • 225 g kale, stems discarded
    • 1 ½ tbsp vegetable oil
    • 2 garlic, peeled and very finely chopped
    • 3 large spring onions, cut into 3mm diagonal slices
    • 175 g brown rice, cooked
    • 1 ½ tbsp soy sauce

    3. Cheesy Bacon & Kale Potato Skins

    Boom! Crispy bacon, vibrant kale, golden-crispy potato skins, and swizzly melted cheese. I believe this treat does not need further introduction. Go make it. Be happy.

    Ingredients

        • 5 slices bacon
        • 5 medium russet potatoes
        • 2 tablespoons oil, divided
        • 1 tablespoon butter
        • 5 ounces kale
        • ¾ cup almonds or pine nuts
        • 1 handful basil leaves or other herbs (optional – see notes)
        • 1 cup cooked chickpeas
        • ¼ cup olive oil
        • ¼ cup shredded Parmesan cheese
        • 2-3 cloves garlic
        • ½ teaspoon salt
        • 1 cup any kind of shredded cheese – I used Chihuahua cheese
