We never need much convincing to treat ourselves and reckon the current weather is as good an excuse as any to tuck into something chocolatey.
The Swedes are known for enjoying rich foods to get them through the long evenings and cold winters of their climate.
Our Nordic cousins have an indulgent dessert that we reckon is perfect for this time of year - Kladdkaka.
This heavy chocolate cake is kind of like a brownie - crisp and chewy on the outside, soft and gooey on the inside.
Swedish folk will have their own recipes for it but we've come across one that sounds incredible and best of all, it requires just six ingredients.
It also takes just a few minutes to make and 20 minutes to bake, meaning you can lash it together and serve it up in no time.
Ingredients
- 135 g salted butter
- 55 g cocoa powder (plus 1 tablespoon) unsweetened, plus extra for sprinkling
- 350 g sugar
- 110 g plain flour
- 1 teaspoon vanilla extract
- 3 eggs lightly whisked
Method
- Line the bottom of an 18-20cm springform cake pan with a circle of baking paper, then grease the paper and the sides of the pan.

Melt the butter in a medium saucepan, then take off the heat and set aside.

Add the cocoa, sugar, flour and vanilla to the butter and stir a little. Then add the eggs and stir everything together until well combined.

Pour the mixture into the cake tin and bake for 20 to 25 minutes until the top is set but the centre is still gooey.

Let the cake cool in the pan, then run a knife between the pan and the cake to loosen it, then turn out onto a plate or wire rack.

Dust with cocoa powder or icing sugar and serve warm with ice cream or cream.
