Slices of fresh lime, chopped coriander, jalapeños, salsa verde and grated cheese provide the icing on the cake. Add some extra hot chillies (label them clearly) for more adventurous diners to enjoy and let guests serve themselves.
Add in some warm crunchy taco shells, some corn tortillas and gluten-free wraps and everybody can create their own meal, meaning your guest satisfaction rate is a guaranteed 100%.
The main ingredient? A huge bowl of (cost effective) spicy minced beef. You could even offer another filled with battered fish for fish tacos and a Quorn or veggie option for vegetarians and vegan guests. A taco bar is the ideal option if you're catering your wedding yourself at home, in a private venue or in a marquee. All you need to make it happen is a few wide trestle tables, plenty of crisp white table cloths and some colourful bowls and plates (you could even source these at second-hand shops and flea markets or borrow them from family and friends).
If your granddad is insisting on the three-course 'beef or salmon' meal, there are loads of ways to incorporate the taco trend into your canapes.
They're also a relaxed option for a day-after barbecue (as well as being the hangover cure your guests will be hugely grateful to you for). Afterwards? Why not go the whole hog and serve dessert tacos (waffle cones stuffed with ice cream/ melted chocolate chunks and sprinkles/ strawberries and cream)...
