Baked, air fried, deep fried, topped with cheese, or garlic or even chilli – we love fries in all shapes and forms.
Our latest obsession? Greek fries.
Perfect for summer, Greek fries are the perfect seasonal twist on our favourite snack, and the best bit? They are easy peasy to re-create at home.
Greek fries consist of potatoes, olive oil, salt, oregano and crumbled feta on top.
You can make the dish with either fries, although a quick Pinterest search will tell you many are opting for wedges. A top tip: If you are making fries from scratch, try soaking your fries in cold water and drying them off completely before frying (or baking). It will make them fries go extra crisp – and perfect for loading with delicious toppings like feta cheese and oregano.

4 medium russet potatoes rinsed and peeled – or scrubbed and unpeeled
Olive oil
Dried oregano
Salt and pepper
Lemon juice
Feta cheese, crumbled
Red onion, chopped
Fresh tomatoes, diced
Fresh parsley
Rinse, peel* and slice potatoes into French fry sticks, about ¼ inch thick.
Place the cut fries in a large mixing bowl and cover with hot water. Allow them to soak for 10 minutes to remove some of their starch.
Drain, rinse and place the potatoes on a double layer of paper towels and dab them dry before the next step.
In a large dry mixing bowl add the potatoes. Drizzle with olive oil, oregano and a generous amount of salt and pepper. Toss to fully coat.
Add the potatoes to the prepared baking sheet in a single layer. Bake for 25 minutes, and flip them over.
Bake 20 minutes longer or until they are crisp on the outside, lightly browned and cooked through.
Remove them from the oven. Drizzle lemon juice over fries and load with the toppings. Sprinkle with minced fresh parsley and serve immediately.
