Sick of turkey while training? Try this ‘fake-away’ recipe

Niamh Maher

We all know it’s great for the waistline, but it’s a bit dull.

Turkey. It’s one of those meats that ticks all the boxes, it fills us up and helps us with all the protein, ideal for people when they’re training and trying to stay on track.

Despite how good it is, there’s only so many ways you can jazz up turkey burgers on a George Foreman (Franks Hot Sauce, that’s how you jazz them up).

So, if you find yourself reaching for the Just Eat app, STOP, here’s a great ‘fake-away’ recipe that will curb your craving and the best part… No guilt.

Turkey yuk sung is incredibly easy, it’s good for you, it doesn’t take long, and you’ll feel like your eating a Thai take-out, all good things.

The take-away version of yuk sung usually comes with pork, and it’s actually quite a healthy dish if you take out the copious amounts of soy sauce, which we are, AND we’re using turkey mince (gold star for us).

Ingredients

  • Turkey Mince
  • Tamari Sauce (healthy alternative to natural soy sauce and gluten free)
  • 2 cloves of garlic finely chopped
  • Stir-fry vegetables of your choice (peppers/spring onions/chillis/corn)
  • 220g can water chestnuts, chopped into small pieces, could also use cashew nuts
  • Brown rice (optional)
  • Iceberg Lettuce

Method

  1. Wash the lettuce, dry and separate leaves keeping them whole. Pat dry and put to one side.
  2. Heat a pan and spray with low-calorie cooking spray, add the garlic and vegetables
  3. Add the turkey mince and cook through then remove all contents from the pan, put to one side
  4. Add the nuts to the pan and brown rice (after it’s been boiled or microwaved so it’s already cooked)
  5. Add 2 tbsp of the Tamari sauce
  6. Put the turkey and veg mixture back into the pan and continue to cook until the sauce has reduced
  7.  Spoon the mixture into the lettuce cups and ENJOY

Another great thing about this recipe… it lasts, so fill up the Tupperware and bring it to work for a balanced lunch, share if you like your colleagues.
