3 delicious salad recipes for people that aren’t that into salads

Summer eating is all about minimal fuss.

Nobody wants to be spending ages slaving away in the kitchen when there is summer days to be lived and enjoyed.

Which is why we are all about salads this time a year. And the best bit? You can eat them on their own, or add things like grilled chicken, fish or veggie burgers to make it an even more filling meal.

And don’t worry if you are normally not a very salad-y person. Because these three recipes are about to change all that:

1. Roasted Cauliflower Salad with Creamy Honey Mustard Vinaigrette

If you have yet to jump onto the roasted cauliflower bandwagon, this is your call. Seriously – this salad is so, so delicious, you’ll be making it on repeat all summer.

This might just be my favourite new salad ever. It is so fresh and tangy and yummy, and you can eat it as is, add grilled chicken if you want, or I bet some veggie burgers would taste AMAZING alongside it too.
