Thinking of going vegan? Veganuary might just be your thing

Ok, so let’s just say new year’s resolutions are not our forte.

We begin with marvellous intentions – the ‘new year, new me’ mentality. We say, ‘this time, we’re going to cook every night,’ ‘this time, we’re going to get fit,’….

… Crack, bam, crash, clang!… our intensions die, along with all of our self-will.

But this year, Strong Roots – the novel start-up food company born in Dublin – is on a mission to help us out with a few things, namely Veganuary!

Yes, Veganuary is actually a thing! – and it’s insanely popular! Each year, January becomes Veganuary and it’s the exact breath of fresh air we need.

Many folks choose to go vegan for great health, to avoid skin problems, to think clearly, to help the planet, to save animals, to save cash (yes veggies are a MAJOR money saver) and because you end up meeting a whole gang who are generally VERY happy, and have no problem whipping up an outstanding meal!

Well Veganuary is being made exceptionally easy this time around thanks to Strong Roots who have an array of nine delicious frozen products that all happen to be veggie and vegan-friendly!

In 2018, Strong Roots are championing Veganuary, offering plenty of recipe suggestions using their scrumptious and SUPER convenient products. Yes, convenience is at the top of everyone’s list but this time – it’s actually good for us.

But that’s not all. Strong Roots have put together some delicious recipes specifically for our readers who want a head start. A super brunch, lunch and dinner await!

1. Sweet Potato Hash (brunch)

Ingredients

  • 80g portion of Strong Roots Garlic Roasted Sweet Potato Chunks
  • 1/2 x red onion
  • 2 tsp cumin
  • Salt and pepper
  • Chilli (a generous sprinkle)
  • Slice of bread
  • 1 tbsp. of coconut yoghurt
  • 1/2 x 200g tin of sweetcorn.

Method

  • Preheat oven to 200 °C.
  • Cook garlic chunks, take out after approx. 15-20 mins.
  • Cut into smaller chunks.
  • Dice red onion and drain sweetcorn.
  • Add the cumin, corn and onion to the sweet potato tray and cook until caramelised.
  • Toast the bread.
  • Assemble the hash onto the bread, finish with some avocado, a dollop of yoghurt, some chilli oil for some spice and serve!

2. Rainbow Layered Salad (lunch) – perfect for lunch on the go!

Ingredients

Handful of all the following:

  • Edamame beans
  • Cherry tomatoes (yellow and red)
  • Grated carrot
  • Strong Roots Roasted Beetroot Wedges
  • Baby kale
  • Cucumber, diced
  • Red onion, diced
  • Sesame seeds

Method

  • Layer all of the ingredients into a jar, as desired. Make sure to keep the salad leaves towards the top to avoid them from going soggy.

3. Chilli Bean Loaded Sweet Potato Fries (yum!)

Serves 1

Ingredients

  • 1/2 tin of red kidney beans
  • 1 tbs of oil
  • 1/2 tin of tomatoes
  • 2 tablespoons chilli powder/flakes
  • 2 teaspoons dried oregano
  • 1 1/2 teaspoons ground cumin
  • 1/2 teaspoon cayenne pepper
  • Salt and Pepper to taste
  • 80g portion of Strong Roots Oven Baked Sweet Potato Fries
  • 2-3 tbs of coconut yoghurt
  • Juice of half a lime
  • Sprig of coriander
  • 1 spring onion, chopped

Method

  • Preheat oven to 200 °C, cook the Strong Roots Sweet Potato Fries as per instructions on the pack.
  • Heat the oil in a saucepan on a medium heat. Add the red kidney beans and tomatoes alongside some of the reserve liquid from both. Mix in chilli powder, oregano, cumin, and cayenne, and stir for 2 minutes or so.
  • Bring to the boil, stirring occasionally.
  • Reduce heat to medium-low and simmer until flavours blend and chilli thickens, stirring occasionally for about 15 minutes.
  • Season to taste with salt and pepper.
  • Mix 2-3 tablespoons of coconut yogurt with the juice of half a lime.
  • Arrange the sweet potato fries in the bowl, adding the chilli on top. Finish with a dollop of coconut lime yoghurt, some spring onion and coriander.

We should probably mention, they’re all even easier than they look! – and ensure a super kick-start  to Veganuary.
