It’s hard being back to the daily grind after the holidays, no?

I think we all agree on this one. Which I why we think collectively, we could all do with a little pick-me-up right about now – you know, to shorten the wait until the weekend rolling around once more.

Enter these Baileys fudge brownies, one way to brighten up a dull Sunday.

Seriously – how gooey and delicious do they look?!

Baileys fudge brownies

Baileys Brownie

3/4 cup (168g) unsalted butter, melted
1 cup (207g) sugar
1 tsp vanilla extract
3 tbsp Baileys Irish Cream
2 eggs
3/4 cup (98g) all purpose flour
6 tbsp (43g) natural unsweetened cocoa
1/4 tsp baking powder
1/4 tsp salt

Baileys Fudge

1/2 cup (120ml) sweetened condensed milk
1 3/4 cups (11 oz | 312g) semi sweet chocolate chips
5 tbsp (75ml) Baileys Irish Cream
1/2 tsp vanilla extract

Topping

6 oz chocolate chips
1 tbsp shortening
