Recipe: Fruity ice lollies, perfect for the gorgeous sunny weather

The perfect summer treat!

We’ve been absolutely blessed with good weather the last few days and long may it last.

That being said it’s always nice to have a delicious way of cooling down during the summer and if you’re looking for something delightful to nibble on while you take in the rays why not try this fruity ice lollies recipe?

This AVOCA recipe should make six to eight lollies depending on size of moulds that you are using.

To help you make a selection of flavours (perfect for a garden party) we’ve included a variety of fruit suggestions and how much of each you will need.

Ingredients:

Strawberry & Banana:

1 punnet strawberries, hulled
2 bananas, sliced
½ lime, juiced

Mango & Coconut:

2 mangoes, peeled & chopped
1 banana, sliced
½ lime, juiced
Coconut flakes, toasted

Pineapple, Kiwi & Mint:

½ pineapple, peeled & chopped
3 kiwis, peeled & chopped
5 mint leaves
2 tsp honey

Method:

1. Add the fruit to a blender & add a little water to help blend together. Mix until smooth but still with a little texture. Add honey (optional).

2. Garnish the moulds with fruit slices or coconut flakes to make a decorative design. Pour the fruit puree over.

3. Add the stick and freeze overnight.

Remove from the mould & serve immediately. You can use any fruit combinations, be creative and have fun!
