In case you haven't guessed, it's like a fried egg/meringue combo but prettier. The best bit? They're only 160 calories for two so essentially, you can enjoy them every day. Here's how to make them: 1. Separate the egg yolks from the whites and whip the whites until fluffy 2. Pile onto a baking sheet (leave a dip in the centre for the yolk later) and bake at around 230C for seven minutes. 3. Remove from the oven, slide the yolk into the centre of each egg white and return to the oven to bake for three more minutes. Once you get the hang of it, the only thing left to decide is how to serve these bad boys. With bacon and parmesan...
Atop a chicken sambo?
With your breakfast fry-up?
With some avocado and chilli...
A little salad?
