Admittedly I'm not the world’s greatest cook but chicken broth is one I can do!
And did you know that chicken is a natural mild antibiotic? It helps fight bacterial infections and also breaks down mucus in our bodies thus fighting off the bacteria that causes all those nasty sneezes, sniffles and runny noises at this time of year.
We can all feel how the temperature has dropped outside and most of us are feeling a bit under the weather but who would have guessed that this family favourite could be the cure. Whilst warming you up on a cold day it’s also a satisfying and filling lunch option.
Planning to roast a chicken over the bank holiday weekend? Great, as chicken is chock-a-block full of vitamins A, B and K as well as potassium and magnesium.
But step away from that bin and don’t you dare throw that carcass away as this is where my culinary skills come into play!
Pop it in a big pot along with a litre of organic chicken stock, vegetables like broccoli or carrots (thrifty tip: this is a great opportunity to use up any of the leftovers from the kid’s plates) or maybe even add other vegetables for more flavour and goodness. I suggest celery, a white onion and lots of garlic for its immune system boosting powers. Leave it to gently simmer for about two hours to really a get a full-flavoured broth.
Plus once the work is done you’ll more than deserve a rest. So I suggest spending the bank holiday Monday snuggled up on the couch, relaxing and drinking a cup of your homemade chicken broth. Yum!
