In recent years Spanish food has had a huge impact on restaurants in Ireland but going out for tapas every night isn’t feasible.
So that is why we are bringing a taste of Spain to you and your home with a delicious Spanish-inspired recipe as well as a classic film.
Meal - Chorizo Carbonara

Ingredients: Fresh Tagliatelli pasta, chorizo, 2 chopped shallots, 2 crushed garlic cloves, 1 chopped red chilli, 3 egg yolks, 150ml single cream and grated parmesan.
Method: Add oil to a pan and heat. Melt the butter before adding the garlic, chilli and shallots. Cook until soft. Add the chorizo and cook for a further 3-4 minutes. Add the cream and parmesan. Keep over a heat.
Cook the pasta using a large pan of boiling water. Whisk the egg yolks. Once the pasta is cooked and drained, add the chorizo mixture and then the yolks. Combine well and quickly before serving.
