Food For Thought: A Quick Recipe For Super-Fast Pad Thai

Kicking off your weekend, it can be hard to stay on the right eating track when you’re trying to squeeze in catch-ups, gym time and your daily to-do lists!

Each week, we’ll bring you one quick recipe with lots of health benefits. Using common ingredients you’ll find in the fridge, press (or local shop at a push!), take the hassle out of home-cooking with this fast meal.

This week… super-fast (and tasty!) Pad-Thai!

This tasty and healthy dish is sweetened with a mix of chilli and soy sauce!

Super Fast and Easy Pad-Thai

  • Prep Time: 5 minutes
  • Cook Time: 10 minutes
  • Total Time: 15 minutes

Ingredients:

  • 200g rice noodles
  • 140g frozen peas
  • 200g frozen prawns
  • 2 tbsp sunflower oil
  • 100g beansprouts
  • small bunch spring onions, sliced
  • 2 beaten eggs
  • 3 tbsp roasted peanuts
  • 2 tbsp soy sauce
  • 2 tbsp sweet chilli sauce
  • small bunch coriander, leaves only

Method:

  1. Bring a pan of water to the boil, add the noodles and cook for 3 mins, adding the peas and prawns for the final min. Drain, and set aside while you heat the oil in a large frying pan.
  2. Fry the noodles, prawns, peas, beansprouts and spring onions, tossing to coat in the oil for a few mins. Push everything to one side of the pan and pour in the egg.
  3. Stir until cooked, then mix everything well.
  4. Toss through the peanuts, soy and sweet chilli sauce so everything is combined.
  5. Scatter with the coriander and serve.
