• 150g fresh Blueberries or Sultanas
• 100g Caster Sugar
• 100g Butter
• 300g Self Raising Flour
• 1 tsp Baking Powder
• 2 large Eggs, beaten
• 1 tsp Vanilla Extract (store cupboard ingredient)
• 140ml Milk
• Green Food Colouring (store cupboard ingredient)

Method

1. Line a baking tray with 12 paper cases.
2. Mix together the butter and sugar until fluffy then add in the eggs, a little at a time until all the egg is absorbed.
3. Add the milk and vanilla extract then fold in the flour and baking powder to make a thick batter.
4. Stir in 4-6 droplets of green food colouring.
5. Add in the blueberries/sultanas and spoon the mixture into the cases.
6. Bake for 30 minutes at 160°C/325°F/Gas Mark 3.
7. Leave the cakes to cool in the tray for 10 minutes.

Make it 1.SIFT together the flour and cocoa. Place in a large bowl; add the butter, sugar, vanilla, eggs and water and mix to combine.
