Spicy foods are the perfect choice for these chilly autumn nights, and they’re all the better when they’re washed down with an ice-cold beer. Corona Ireland are giving you the chance to enjoy that beer on a beautiful beach in a great competition, but for now we’ve paired up with Corona to bring you a series of the best Tex Mex recipes, tasty treats that are sure to have you feeling the love at the dinner table! Next up, some classic beef burritos.

Recipe
6 x flour tortillas
50ml olive oil
1 onion, finely chopped
2 cloves garlic, crushed
500g beef mince
1tsp ground cumin
1tsp paprika
1tsp chili powder
400g canned chopped tomatoes
200g canned kidney beans OR black beans drained
Serve with:
Grated cheese
Salsa
Guacamole
Shredded lettuce
Method
Heat the oil in a large saucepan or wok.
Saute the onion and garlic for three to four minutes.
Add the beef, along with the cumin, paprika and chili powder and continue to cook until the beef is browned.
Stir in the chopped tomatoes, your preference of kidney beans or black beans, bring to the boil then reduce to a simmer for 10 minutes.
Spoon the filling into the centre of the tortillas and add cheese, salsa, lettuce and guacamole to taste.
Serve along with an ice-cold Corona, and hey presto – you’ve got the perfect Tex Mex night in!
