Recipe for Success: Broadcaster Rick O’Shea Shares His Favourite Recipe for Baked Eggs with Goat’s Cheese

One thing that we’ve noticed over the years is that food plays such an important role our in lives and not just for fuel but for entertaining and providing us with fond memories too.

We’ve chatted to some of Ireland’s well-known faces to discover their favourite dishes and meals, be it from their childhood or simply something they like to rustle up at home.

Rick O’Shea is a Irish radio DJ who broadcasts weekly from 2pm on RTÉ 2fm, a patron @epilepsyireland, he’s also a PPI National Radio Award winner, a Meteor Ireland Music Award nominee and winner of Irish Celebrity Mastermind 2012.

Here he shares his recipe for amazing baked eggs with goat’s cheese. “This is great, GREAT comfort food for an evening when you want something quick and lovely and warm…” he says.

Baked Eggs with Goat’s Cheese

Serves 2

Takes about 20 minutes to include prep and cooking.

Ingredients

  • 200g Baby spinach, washed
  • 1 clove of garlic, crushed
  • 70g soft goat’s cheese
  • 2 large eggs
  • Knob of Butter
  • Black pepper
  • Tabasco sauce (if you like)

Instructions

  1. Heat oven to gas mark 5.
  2. Heat butter in pan, add the crushed garlic and then wilt the spinach over a medium heat.
  3. Take off the heat and place spinach in bottom of a ramekin dish with a sprinkle of black pepper.
  4. Place sliced or crumbled goat’s cheese on top and then break egg over cheese. Add a few drops of Tabasco sauce over each egg.
  5. Cook in oven for 15 minutes (or until egg done to your preferred consistency).
  6. Serve with fresh brown bread.
