If you’re doing a ‘homemade gift’ for Valentine’s this year, or simply whipping up a meal for two to show you care, you might want to make these cupcakes for a special (but delicious) dessert.
As part of RTÉ Player’s Food Hub, Rachel Allen has created a recipe for red velvet cupcakes that are quick and easy to make – and sure to go down a treat whoever the lucky taster is…
With ingredients you'll find stocked in the kitchen press, all you need is an hour of your time and the patience not to eat the cake mix.
So here’s the ingredients you’ll need for these cupcake creations:

200 g (7oz) caster sugar
1 tsp vanilla extract
