Here’s the perfect lunchtime wrap. To get ahead, you could make it night before, wrap it in cling film and keep it in the fridge, ready for the morning rush.

Ingredients
1 x 50g (1 ¾ oz) less than 3% fat tortilla wrap
1 tablespoon hoisin sauce
40g (1 ½ oz) cooked chicken, shredded
50g (1 ¾ oz) beansprouts
1 spring onion, shredded finely
¼ mild red chilli, de-seeded and shredded finely (optional)
1 tablespoon chopped fresh coriander
1 tablespoon chopped fresh mint
Method
Put the Tortilla wrap on a clean board.
Spread the hoisin sauce over the wrap, leaving a 1 cm (1/2 inch) border around the edge.
Scatter the chicken, beansprouts, spring onion, chilli (if using), coriander and mint over the top.
Carefully roll up the wrap and cut it in half on the diagonal. Wrap in cling film and, if desired, keep in fridge until needed.
Try this: Replace the chicken with 40g (1 ½ oz) shredded, cooked, smoked duck for the same ProPoints values per serving.
