Love pudding but fancy something a little different? This rum and raisin rice pudding is a nice twist on an otherwise traditional recipe. Warming and delicious, this is total comfort food.

Ingredients
125g dried short grain pudding rice
30g light brown soft sugar
450ml skimmed milk
1 tablespoon raisins
1 tablespoon dark rum
A pinch of ground cinnamon, to taste
Method
Put the rice, sugar, milk and raisins in a medium non-stick saucepan and gently heat until all of the sugar has dissolved.
Next bring the mixture to a simmer and cook gently, stirring occasionally, for 15-18 minutes until the rice is tender and the milk has almost been absorbed. For the final three minutes of cooking time, stir in the rum.
Remove the saucepan from the heat and divide the rice pudding between four bowls. Sprinkle with some cinnamon to taste and enjoy!
