This delicious seafood and chorizo fricassee is perfect for those warm summer nights when you want something a little different. It’s great for outdoor dinner parties and quiet nights in.

Ingredients:
Calorie controlled cooking spray
50g chorizo, diced
Half an onion, chopped finely
200g pre-packed seafood selection
3 tablespoons dry white wine
2 tablespoons chopped fresh parsley
Salt and freshly ground black pepper
Method:
1. Heat a non-stick frying pan and mist with the cooking spray. Cook the chorizo for 2 minutes, then add the onion and garlic. Cook for 6-8 minutes until softened and a little golden.
2. Increase the heat to high and add the seafood. Season and fry for 2-3 minutes, stirring frequently. Pour in the white wine and bubble for a few minutes. Remove from the heat, stir in the parsley and serve immediately.
Try this: Serve with 2 x 20g slices of ciabatta for dunking and a generous mixed salad for an extra 3 ProPoints values per serving.
