4 great comfort food recipes that are accidentally vegan

For those days when you just need something hearty.

Being vegan doesn’t mean that you have to cut back on all your favourite meals. We’ve scoured the internet to find some brilliant vegan recipes that are comforting and healthy too.

Whether you’re a fully fledged vegan or just trying to cut back on your meat and diary, you’re guaranteed to love these seriously tasty dishes made with ingredients you can buy at your local Lidl.

Pesto pasta from Deliciously Ella

Ingredients:

  • 3 servings of pasta
  • 100g cashews for the pesto and 50g cashews to sprinkle
  • 1 ripe avocado
  • 1 and a 1/2 lemons
  • 25g of fresh basil
  •  4 tablespoons of olive oil
  • 3 tablespoons of water
  • 2 teaspoons nutritional yeast (this is optional, leave it out if you don’t have any)
  • 1 clove of garlic
  • Salt

Method:

  1. Place 50g of the cashews into a food processor and pulse for a few seconds, until they’re broken up. Then toast them in a frying pan until they go golden brown
  2. Now add all the pesto ingredients, except the pasta, in a blender and blend until smooth and creamy. Then toss with your pasta and sprinkle with the toasted cashews.

5-minute chickpea curry from The Happy Pear

Ingredients:

½ red onion
2 tablespoons olive oil
1 clove of garlic
½ thumb-sized piece of ginger
½ a red chilli (if you like it spicy like Dave, leave the seeds in!)
1 tbsp curry powder
1 tsp cumin powder
1 tsp ground coriander
1 tsp ground paprika
1 400g tin chopped tomatoes
1 400g tin coconut milk
1 400g tin of chickpeas (drained and rinsed
1 tsp salt
½ tsp ground black pepper
small bunch of coriander
zest of ½ lime
juice of ½ lime

Method:

  • Heat the oil on a medium heat.
  • Thinly slice the onion and garlic and add to the pan.
  • Grate the ginger into the pan. No need to remove the skin!
  • Thinly slice the chilli and add to the pan.
  • Add the spices and cook for 30 seconds.
  • Add the chopped tomatoes, coconut milk and chickpeas.
  • Add the salt and pepper.
  • Chop the coriander and add to the pan along with the lime zest.
  • Add the lime juice, season to taste and serve with avocado and the grain of your choice. Lovely!

Peanut butter cups from This Rawsome Vegan Life

Ingredients:

  • 1/4 cup peanut butter
  • 2 bars dark chocolate

Method:

  1. Melt the chocolate. In cupcake papers, pour in a tiny bit of melted chocolate and put in the freezer for a few minutes until the chocolate hardens. Scoop in a teaspoon or tablespoon of peanut butter then cover up with more melted chocolate. Stick the freezer again until hardened. Enjoy!

 

Strawberry dream ”nice” cream from Elizabeth Finch.

Ingredients:

  • 2 frozen bananas
  • 1/3 cup unsweetened almond milk
  • 1/2 cup sliced strawberries (or other berries)

Method:

  1. Place all ingredients in the bowl of a food processor, and pulse until the ice cream is smooth and creamy. If the ice cream is too thick, add more almond milk, 1 tablespoon at a time. The bananas should break up and the texture should be smooth and creamy.
