There are certain dishes that just make you feel better like your mums signature shepherd’s pie or your dads famous omelette.  They’re the food equivalent of someone giving you bear hug and telling you it’ll all be OK.

We recently teamed up with Henry Denny’s Meat Masters to track down some fantastic French recipes and chicken tartiflette is a classic alpine dish that you need in your life. Never heard of it? Well, you’re in for a treat.

Ladies, this is the comfort food you’ve been waiting for. Enjoy!

Ingredients (makes 2): 
  • 700g Charlotte potatoes
  • 300g baby spinach
  • 1 tbsp olive oil
  • 1 large onion, finely chopped
  • 2 large garlic cloves, chopped
  • 200g smoked bacon lardons
  • 2 tbsp plain flour
  • Butter for greasing
  • 200ml double cream
  • 200ml chicken stock
  • 360g Henry Denny’s Meat Masters Rotisserie chicken
  • 250g Reblochon cheese, rind removed, chopped

Method:

  1. Cut the potatoes 3mm thick and simmer for five minutes in salted water until tender. Drain.
  2. Put the spinach in a colander, pour boiling water over it to wilt, then rinse in cold water before drying it off.
  3. Heat the oil in a pan on a medium heat and cook the onions until they’re soft. Add the garlic and cook for a further two minutes before adding the bacon. Fry until crisp and then stir in the flour.
  4. Grease a large ovenproof dish with the butter.
  5. Mix the cream and the stock before seasoning.
  6. Layer the sliced potatoes, onion and bacon mix, the spinach and the sliced chicken in the dish.
  7. Pour the cream and stock over it and finish with a layer of sliced potatoes, seasoning with salt.
  8. Bake in an oven that’s been preheated to 200 degrees or 180 degrees (fan oven) for 30 minutes.
  9. Spread the remaining cheese on it and bake for a further 10-15 minutes until golden brown.
