When it comes to cheese, we can’t get enough of it.
From the wonderfully strong Roquefort to the mild Tomme de Chèvre – the list of amazing cheeses is very long.
In this new feature for all the cheese lovers out there, we’re looking at some our favourite and tasty cheeses from across the world.
This month we’re looking at one of Ireland's most delicious cheeses, Cooleeney's Darú:
Darú
Origin: Tipperary, Ireland
This amazing cheese is part of Cooleeney Farm that was established in 1986 and produces a range of speciality cheeses.
The fourth generation of the Maher family work the land on the farm and they own a pedigree Friesian dairy herd, enjoying green pastures and carefully selected feed.
Why it’s so tasty:
When you have a taste of Darú, you're immediately transported into the Irish countryside.
Fully mature at 9 months, the flavour is mild but buttery and if you close your eyes your experience a cheese oozing with personality, with notes of earth and cellar coming through from the rind.
Darú boasts a natural rind that's grey and has a dusty appearance. The inside holds a semi-hard, yellow paste with small air holes. The company notes that there's a "discernable chalkiness towards the centre of the paste. Fully ripened cheeses will be broken down all the way through".
