Here’s a simple recipe for some amazing pancetta-wrapped chicken with LowLow
Ingredients
125g LowLow Mature Cheddar Spread
4 Chicken Breasts
8 Sun-Dried Tomatoes
8 Slices of Pancetta
1 Small Savoy Cabbage
Low Fat Spray / Olive Oil
Freshly Ground Black Pepper
What you’ll make:
Delicious chicken for 4 – yum!
Method:
Pre-heat the oven to 180C (gas mark 6)
Cut a slice in each chicken breast at its thickest to create a pocket
Spread a quarter of the LowLow Mature Cheddar Spread into the chicken pocket and place 2 sun-dried tomatoes into each pocket.
Wrap 2 slices of pancetta around each chicken breast, making sure to seal the pocket.
Place the chicken breasts on a baking tray and spray with low-fat spray or drizzle with olive oil. Season with black pepper. Cook for 20minutes.
While the chicken is cooking, slice the cabbage and steam for 4-5minutes.
Drain the cabbage and serve the chicken on a bed of the cabbage.
Tip! For extra zing, try swapping the LowLow Mature Cheddar Spread for LowLow Mature Cheddar Spread with Red Pepper and Chilli!
