Each week, we’ll bring you one quick recipe with lots of health benefits. Using common ingredients you’ll find in the fridge, press (or local shop at a push!), take the hassle out of home-cooking with this fast meal.
This week… we’re giving you a taste of Morocco with a delicious couscous recipe. From dressing up a salad, to bulking out your stir-fry, this quick recipe will help stave off the hunger pangs while adding some spice to your dish!
Ingredients:
- 1⁄2teaspoon vegetable oil
- 2 green peppers, chopped
- 1 sweet red pepper
- 1 garlic clove, minced
- 2 tomatoes, chopped
- 1 courgette, diced
- 180g chickpeas, cooked
- 235ml boiling water
- 1⁄4teaspoon salt
- 1⁄2teaspoon curry powder
- 1teaspoon ground cumin
- 2tablespoons fresh parsley
- 1⁄8teaspoon ground cinnamon
- 1⁄2teaspoon ginger
- 1⁄4teaspoon cayenne
- 180g uncooked couscous
Method:
- In a medium-size frying pan, heat the oil.
- Add green onions, sweet pepper, garlic, tomatoes and courgette and saute for 5 mins, stirring.
- Remove from heat and keep warm.
- In a medium-size saucepan, combine the remaining ingredients, mix, cover and let stand 5 minutes, until liquid is absorbed. Add the first mixture from your frying pan and fluff with a fork.
