Dessert? Velvet cake? Weekend treats? Yes please!
This great recipe is a cool twist on the classic red velvet cake, that’s coloured green and looks fresh and zingy! Why not give it a go?
Ingredients:
(approximately 8 – 10 slices )
For the recipe Green Velvet Cake
For the cake:
- 250 g Plain Flour
- 175 ml Buttermilk
- 100 g Butter
- 250 g Caster Sugar
- Large Eggs x 2
- 10 g Dr. Oetker Baking Powder (2 Tsp)
- Dr. Oetker Lime Green Gel Food Colour (2 Tubes)
- 10 ml Dr. Oetker Madagascan Vanilla Extract (2 tsp)
- 5 ml Vinegar (1 Tsp)
For the icing:
- 125 g Cream Cheese
- 125 g Butter
- 300 g Icing Sugar
Method:
- Preheat oven to 170C and line a 7’cake tin or 2 sandwich tins
- In a large bowl or processor cream together the butter and sugar until light and fluffy
- Sieve the flour and Baking Powder together in a separate bowl
- In a jug measure the buttermilk and add the Gel Food Colouring and vinegar
- Add half the flour mixture to the egg and sugar mixture and combine
- Add half of the now green buttermilk and vinegar and combine
- Repeat again until all is combined and you are left with a thick batter
- Pour the mixture into your tin and bake for 20mins if using sandwich tins or 35 minutes in a 7′ tin
- Remove from tins and leave to cool
- Meanwhile make your buttercream by combining all ingredients together in a food processor and beat for 8-10minutes
- When cakes are cooled sandwich together with1/3 of the buttercream and use the remaining buttercream to cover the outside
