Recipe: Refreshing Cucumber and Avocado Smoothie

When if comes to making smoothies, most folks prefer to stick to what they know – fruits, yoghurt and some honey – but did you know that avocados work incredibly well in the mix?

Refreshing, cleansing and creamy, avocados boost nutrition absorption and are full of fibre and healthy fats. Give this cucumber and avocado smoothie a go – you won’t regret it.

Ingredients:

  • 1/2 long cucumber, cleaned and diced
  • 1/2 large ripe avocado, peeled, deseeded and diced
  • 1/2 cup natural Irish yoghurt
  • 1 tablespoon natural Irish honey
  • 5 ice cubes

Method:

  1. Put all the ingredients into a blender and mix it up until smooth.
  2. Let the smoothie rest for a few moments.

Tip: If the smoothie is too thick, add in a little watered-down yoghurt and if it’s too thin add in a bit more avocado.
