Sunday Sweet Treat: Chocolate Chip Banana Bread

For our ‘Sweet Treat’ feature, we bring you a taste bud-tingling, saliva-inducing recipe every week.

Whether you simply want to put your baking skills to the test or fancy treating your colleagues to something tasty (hint hint Her.ie girls!), this is where to come.

This week, it’s Chocolate Chip Banana Bread courtesy of Boutique Bake

Serves 12

Ingredients:

  • 1 x Boutique Bake Carrot Cake Mix
  • 2 eggs
  • 125ml sunflower oil
  • 2 ripe bananas, mashed
  • 60g chocolate chips

Method:

1. Preheat the oven to 180°C/350°F/Gas 4.

2. Peel your bananas, then mash them up using a fork.

3. Add the eggs, oil and cake mix into a large bowl and mix well.

4. Next, fold in the chocolate chips.

5. Grease and line a 2lb/20cm x 12.5cm/8inch x 5inch loaf tin.

6. Next, pour the cake mixture into the tin and flatten the top out nicely.

7. Pop in the oven and bake for about 50 minutes, until well risen and golden-brown (or until a skewer inserted comes out clean).

8. Remove from the oven and cool in the tin for a few minutes, then place onto a wire rack to cool completely before serving.
