This week the recipe is for New York style baked cheesecake, courtesy of the fabulous Junior's Restaurant on Bath Avenue, Dublin 4.

12' cake tin serves 12 peopleIngredients:
12' non-stick spring form pan
1 packet ground digestive biscuits
225g melted unsalted butter
800g Philadelphia cream cheese
250g castor sugar
Juice and zest of 1 lemon
1 vanilla pod
6 egg yolks
6 egg whites
Method:
1. Combine the crushed biscuit and butter
2. Line the 12' pan with ground mixture on both base and sides. Set aside
3. Mix cream cheese, castor sugar, lemon juice and zest, vanilla, and egg yolks until smooth.
4. In a separate bowl add egg whites and beat until they form stiff peaks. Fold egg whites into cheese mix. Pour combined mixture into the biscuit lined cake tin and bake at 180 for 35 minutes.
5. Once fully cooked, remove from oven and allow to cool for 1 hour before slicing and serving with fresh berry compote
