Three Gorgeous Cocktail Recipes To Get You In The Mood For Summer

When the sun shines in Ireland, all we want to do is sit back, soak up those rays and enjoy a tasty cocktail or two.  

That’s why we’ve teamed up with Roxanne Monteiro, head mixologist at the Signature Lounges at the g Hotel & Spa (who is busy creating their Galway Raceweek summer-inspired cocktails) to share some delicious-sounding recipes for you to try at home.

Grapefruit and Thyme Gin Sparkler

  • 300 ml Vodka
  • 400 ml Grapefruit juice (freshly squeezed if possible)
  • 60 ml Simple Syrup*
  • 1 bottle of Prosecco
  • 8 sprigs of Thyme (or you can make thyme ice cubes)

Method: Add the gin, thyme, grapefruit juice and simple syrup to your pitcher. Stir gently, ensuring all ingredients are fully blended. Add your prosecco and your thyme ice cubes.

Garnish with thinly sliced grapefruit.

Elderflower and Blueberry Collins

Ingredients:

  • 40 ml Gin
  • 20 ml lemon juice
  • 20 ml Elderflower syrup
  • 5 blueberries
  • Soda water

Method: In a tall glass muddle your blueberries and elderflower syrup together. Add lemon juice and gin. Fill glass fully with ice then top with soda water.

You should be left with a beautiful ombre effect from the muddled blueberries to the soda top. Garnish with a blueberry skewer and serve.

Pineapple Mojito

Roxanne says: When I think of summer cocktails I immediately think of rum, so it would be wrong to forget the mojito, and here’s a nice tropical twist on the classic. To make the perfect mojito, you must ensure all the simple flavours are balanced – sweet, citrus and the sugar-based alcohol mixed together with a healthy helping of mint.”

Ingredients:

  • 50 ml Rum
  • 20 ml fresh lime juice
  • 20 ml simple syrup
  • 40 pineapple juice
  • 7 mint leaves
  • 2 chunks of fresh pineapple
  • 2 slices of lime

Method: Mix together the mint, fresh pineapple, lime slices and simple syrup. Then slap in your mint, pour in your lime juice and rum and top with pineapple juice. Garnish with a mint spring, pineapple or lime wedge. Don’t be afraid to get creative with your garnish!
