Pineapple Mojito

Roxanne says: When I think of summer cocktails I immediately think of rum, so it would be wrong to forget the mojito, and here’s a nice tropical twist on the classic. To make the perfect mojito, you must ensure all the simple flavours are balanced - sweet, citrus and the sugar-based alcohol mixed together with a healthy helping of mint."

Ingredients:

  • 50 ml Rum
  • 20 ml fresh lime juice
  • 20 ml simple syrup
  • 40 pineapple juice
  • 7 mint leaves
  • 2 chunks of fresh pineapple
  • 2 slices of lime
