Recipe for Success: Model and Entrepreneur Aoife Cogan Shares Her Favourite Recipe for (healthy-ish!) Tiffin Squares

One thing that we’ve noticed over the years is that food plays such an important role our in lives and not just for fuel but for entertaining and providing us with fond memories too.

We’ve chatted to some of Ireland’s well-known faces to discover their favourite dishes and meals, be it from their childhood or simply something they like to rustle up at home.

Aoife Cogan is one of Ireland’s most recognised models, a succesful artist and co-owner of Form School – a reformer pilates, ballet barre and yoga studio – that she opened with husband Gordon D’Arcy in December 2013.

Here, Aoife shares her recipe of choice for tiffin squares from Susan Jane White‘s latest cookbook. So, why did she choose this particular treat?

“It is absolutely gorgeous. I am an absolute fiend when it comes to sweet things, this tastes great and has no nasty refined sugars – only natural date/agave syrup. Its a tasty healthy little treat. Her new cook book is out of this world, you should check it out!”

Tiffin Squares

makes 10

Ingredients

  • 1 Cup of best quality tahini
  • Sprinkle of organic refined salt
  • 1/2 Cup date syrup or dark raw agave
  • 1 Large tbsp coconut oil, melted
  • Dash of real vanilla extract
  • 2 tbsp Green and Blacks organic cocoa powder
  • Handful of mixed raisins
  • Handful of raisins
  • Handful of walnuts
  • Handful of raw cacao nibs (optional)
  • Handful of goji berries

Instructions

  1. Find a small container, the size of your whole hand. It needs to be as deep as half your hand. Line with one sheet of cling film.
  2. using a fork and large-ish bowl, mix the tahini, salt, agave, vanilla essence, melted coconut oil and pure cocoa powder together.
  3. Thoroughly stir through raisins, walnuts, cacao nibs and even the odd red goji berry.
  4. Spoon into your pre lined container, pressing goji berries on the top before placing in the freezer to set.
  5. Once set, remove from container, wrap in baking parchment, return to freezer and raid it at your will!
